A quarter beef represents roughly one quarter of the beef. Our farm sells a “mixed quarter,” which is essentially half of a half – meaning your quarter includes cuts from both the front and hind quarters, for a balanced variety.
Weight and Yield: Roughly 112 +/- lbs of packaged beef.
Cuts Included: You’ll receive a well-rounded selection of beef cuts. Expect roughly 20–30% to be steaks, 30% roasts and slow-cooker cuts, and about 40–50% ground beef.

A half beef, or “side of beef,” is an entire side of the animal (one front quarter + one hind quarter). Many find that a half cow can feed a family of four for 6–12 months, depending on how often beef is on the menu (roughly 8+ lbs of beef per week is a common usage rate).
Weight & Yield: Roughly 225 +/- lbs of packaged beef.
Cuts Included: With a half beef, you receive a full spectrum of cuts from both the front and hind sections. You can expect a generous assortment of steaks – often including ribeyes, T-bones/porterhouses, New York strips, filet mignons (tenderloin), and sirloin. There will be numerous roasts such as chuck, arm, rump, sirloin tip roast, and plenty of stew meat, perfect for slow cooking, soups, and family meals. A half share also includes BBQ cuts like brisket and short ribs. In addition, you’ll get a large amount of ground beef, for versatile and easy-to-cook meals.

A whole beef means you are buying an entire animal’s worth of beef. This is a large quantity – ideal for multiple families splitting an order, or one big family with significant freezer space. This bundle gives you the maximum variety of cuts and the most control over cut customization.
Weight & Yield: Roughly 450 +/- lbs of packaged beef.
In terms of storage, a whole beef will require about 16–20 cubic feet of freezer space, the standard size of a large standalone/chest freezer.
Cuts Included: When you buy a whole cow, you truly get every cut the animal can offer. This means all the steaks (from high-end cuts like ribeye, strip, T-bone/porterhouse, tenderloin/filet, sirloin, down to cuts like skirt, flank, and flat iron), all the roasts (chuck roasts, round roasts, rump, brisket, etc.), all the ribs (back ribs, short ribs), and everything in between. You will also end up with a very large quantity of ground beef – often 150–200+ pounds of ground beef.
